Old Fashioned Peach Cobbler

Fruit Mixture:
6 Tbsp tapioca
1 cup sugar
1/4 tsp cinnamon
dash of nutmeg
6-7 cups sliced peaches
Combine all and pour into buttered 9×13 pan

Cobbler dough:
1/2 cup soft butter
1 tsp salt
1 cup sugar
2 cups flour
2 tsp baking powder
1 1/2 cups milk
Mix together and spread over fruit

Cobbler topping:
1 1/2 cups sugar
2 Tbsp cornstarch
Cinnamon and nutmeg to taste
Stir together and sprinkle evenly over top of dough, then pour 1/2 cup boiling water over top.

Bake at 375 degrees for 1 hour.  Serve with Linda’s favorite, Blue Bell Homemade Vanilla Ice Cream…or your favorite ice cream.
Serves 15.

 

Chocolate Cobbler

6 tbl butter
1 cup flour
1/4 tsp salt
2 tsp baking powder
3/4 cup sugar
1/2 chopped pecans
2 tbl cocoa
1/2 cup milk
1 tsp vanilla
1/2 cup sugar
1/2 cup brown sugar
1/ cup baking cocoa
1 1/2 cups boiling water

1. melt butter in 13×9 baking pan in a 350 degree oven 2) combine flour, salt, baking powder, 3/4 cup sugar, 1/2 cup of chopped pecans, 1 1/2  tbl baking cocoa, milk & vanilla in a small bowl, spoon mix over melted butter (do not stir)  3) mix remaining sugars and 1/4 cup cocoa together & sprinkle over batter (do not stir), 4) pour 1 1/2 cups boiling water over top of mix (do not stir) 5) bake at 350 degrees –35-40 minutes

(Serve with Blue Bell Homemade Vanilla)

 

Poppy’s Pancakes:

1 – cup flour, 1/2 tsp Baking Powder,1/4 tsp Soda,2 tsp Sugar,1/2 tsp Salt,1 cup buttermilk,1/2 cup milk, 1 egg separated,2 Tbls melted butter–mix dry and then add egg yolk , melted butter then buttermilk & milk, whip egg white till fluffy & then fold into batter, use bacon grease and cook cakes on 400 degree griddle–Enjoy

 

NANA’S TEXAS SHEET CAKE:

2 c flour
2 c sugar
2 eggs, beaten
1 tsp vanilla
1/2 tsp salt
1 tsp soda
3 Tbls cocoa powder
1/2 tsp cinnamon
1 c butter
1/2 c buttermilk
1 c water
mix flour, sugar & salt in bowl,
mix butter(melted), water, & cocoa in sauce pan(boil),
Pour over dry ingrediants & blend,
In a bowl Mix the 2 eggs, soda, buttermilk, & vanilla, Add
to choc batter & mix well. grease a 10 1/2 X 151/2 sheet & dust with flour.
Pour mixture in sheet & spread evenly

Frosting :
1/2 c butter, 3 tbls cocoa, 6 tsp milk, 1 box of powered sugar, t tsp vanilla
Heat first 3 ingred, slowly add Powder sugar, and beat well, add vanilla. Pour over
hot cake. Place pecan halves on cake–ENJOY

 

MINESTRONE  w/SWEET ITALIAN SAUSAGE SOUP:

2 tbls olive oil
1 lb sweet Italian sausage
1 onion chopped
3 cloves garlic chopped
1 15.5 oz cannellini beans drained
4 c spinach
1- 32 oz chicken stock + 2 c water
3/4 whole wheat pasta
salt & pepper to taste
grated nutmeg (not a lot)
2 tsp lemon zest
Parmesan cheese to garnish
Brown sausage & onions in oil, add garlic, pour stock over with water, heat to low boil , add pasta & cook for 10 minutes
Adjust seasonings  to your taste, Add beans,spinach & zest , Add  Parmesan to garnish in individual bowls.
